Can you lower your blood sugars with vegetables?

Non-Starchy (low carb) vegetables

These vegetables are so good for you. They provide us with essential nutrients & fiber- and also are very low in calories. They will also have little to no effect on your blood sugars- so fill up!

In this summer season, fresh vegetables are cheaper and more abundant than other times of the year. Make it your time to:

  • Try a new vegetable
  • Combine multiple vegetables into 1 meal
  • Try a different way of cooking, like in your air fryer or on the grill

​

Here is a lengthy list of these veggies:

  • Artichoke
  • Artichoke hearts
  • Asparagus
  • Baby corn
  • Bamboo shoots
  • Beans (green, wax, Italian)
  • Bean sprouts
  • Beets
  • Brussels sprouts
  • Broccoli
  • Cabbage (green, bok choy, Chinese)
  • Cauliflower
  • Celery
  • Chayote
  • Cucumber
  • Eggplant
  • Greens (collard, kale, mustard, turnip)
  • Hearts of palm
  • Jicama
  • Kohlrabi
  • Leeks
  • Mushrooms
  • Okra
  • Onions
  • Pea pods
  • Peppers
  • Radishes
  • Rutabaga
  • Salad greens (chicory, endive, escarole, lettuce, romaine, spinach, arugula, radicchio, watercress)
  • Sprouts
  • Squash (cushaw, summer, crookneck, spaghetti, zucchini)
  • Sugar snap peas
  • Swiss chard
  • Tomato
  • Turnips
  • Water chestnuts
